A Tale of Taste Trailblazers
A good pilsner is one of Australia’s greatest rarities. Sourcing a crisp, amber drop can be like getting blood from a stone, but it’s a quest our head brewer Mike forged in vain for many years. As his taste buds lost all hope with every bland pint, Mike grew determined to lead a flavour revolution.
This unquenchable thirst led him to buy a novice brewing kit, setting in motion a dedicated crusade to craft the perfect beer, one defined by subtle flora flavours soaked through a quality brew.
After much exploration, experimentation, and a trip down the rabbit hole of homebrewers in Holland, Mike transformed his garage into a more elaborate home brewery.
What started out as a selfish pursuit to appease his palate, soon turned into a community affair. Locals soon became his taste bud test subjects and the muse for his booze.
We at 7th Day are in the business of social lubrication - allowing us to slip the restraints of corporate coldness, skirt the rules of society, and slick the road less travelled with a product that’s for everyone.
From charitable ventures, to steadfast support for local businesses, sporting teams, events, and initiatives - our aim is, was, and always will be to propel others toward greatness. ‘Beer, for good’s sake’ is a mission, to drink good and do good.

7th Day’s XPA sits light and clean in the mouth with a touch of grain amongst a flurry of tropical fruity hops, almost like an IPL (which I still say is an underrated style). Its easy-drinking nature is tempered as the bitterness reveals itself, washing in like waves on the beach as the tide comes in. But you’ll still find yourself reaching for another as soon as the final sip is gone."

Hazy Pale Ale
ABV 4.1%
Taking the place of past fan favourite Pacific Ale, winner of an AIBA gold medal in 2022, Hazy Pale Ale becomes the spiritual flagship beer of 7th Day Brewery. Pumped up to 4.4 percent ABV, it pours with a fluffy white head with a dark and cloudy gold hue that is pushing into amber territory. The aromas are a stinging pine bushell spiked with citrus.
On the palate, Hazy Pale Ale manages to be as bold as it is refreshing. Each sip is a round and robust punch that really settles on the tongue and between the teeth. Sharp grapefruit teams up with a surprisingly delicate hop blend to create something that feels like a hybrid bladerunner of a beer, one that could be sipped as a solo quiet one or gulped as an efficient summer BBQ lubricant. It's a beer that is ready for the pace you are about to set, and the definition of a chill one too.

Ok, seriously. Mike & Nath are just a couple of humble fellas who bloody love beer (yes, making it & eventually drinking it!) Both of them self-proclaimed world wonderers who have found their home in our Brookie taproom with a wealth of knowledge across the globe on all things beer.
Drop by any time & have a gander (or a yarn), they're around most reasonable hours during the day so they can R&D the arvo away.

Making Waves Series
A Collection Of Unconventional Brews
Our Making Waves series is a collection of somewhat unconventional brews that pave the way for making a difference, pushing boudaries, creating waves from what we usually do, and of course, creatcing a thirst for excellence.
Every 12 months or so we release 9 beers as a part of the Making Waves series, and they are canned and tapped for a limited time each. Staying true to our community and supporting local creatives, we engaged with a local ‘Artist in residence’ to create the entire suite of designs for our 'Making Waves' series. The illustrations and design tie in with our branding, whilst also revealing a unique and entirely fun imagery, that is ‘making waves’ away from our original visuals for the brand.
The flavour profiles and illustrations of this limited series are edgy, quirky and break the mould from our core beer range. Though at the same time, each beer style and title will have a depth of meaning which will always pay homage to our core values of Drinking Good and Doing Good. To make a difference, you've gotta make waves.

Our artist in residence is Nat Welsh, an Illustrator from Sydney's Northern Beaches. Working across a range of projects she love to create art that is anything but ordinary!
Her career so far has seen her work across the fashion and lifestyle industries for brands including Volcom Australia, Liberated Heart,
Triple J, 7th Day Brewery & Hippies in the City.
She recently created the epic graphic for Triple J Hottest 100 cover.
