A Tale of Taste Trailblazers

A good pilsner is one of Australia’s greatest rarities. Sourcing a crisp, amber drop can be like getting blood from a stone, but it’s a quest our head brewer Mike forged in vain for many years. As his taste buds lost all hope with every bland pint, Mike grew determined to lead a flavour revolution.

This unquenchable thirst led him to buy a novice brewing kit, setting in motion a dedicated crusade to craft the perfect beer, one defined by subtle flora flavours soaked through a quality brew.

After much exploration, experimentation, and a trip down the rabbit hole of homebrewers in Holland, Mike transformed his garage into a more elaborate home brewery.

What started out as a selfish pursuit to appease his palate, soon turned into a community affair. His kid’s sporting sidelines swirled with stories among parents of Mike’s lucrative lager. Locals soon became his taste bud test subjects and the muse for his booze.

A beer wizard in Oz, Mike rallied a group of mates who were just as daring and curious. Over shite beer, the group vowed to lead a revolution in the beverage space - crafting what was to become Australia’s most succulent pilsner (shortly followed by a vast lineup of beers to suit even the pickiest of palates). Mike, Ian, Ashley, Melissa, and Gavin joined the Curl Curl crew, establishing what today is known as 7th Day Brewery.

7th Day challenges the idea that relaxation needs to be confined to week’s end. It’s our belief that the sublime can be summoned, with the crack of a can.

The 28th of October 2018 went down in history as the day the group ventured into the unknown and stepped out of the warm confines of Mike’s garage. All thanks to the help of crowdfunding by a community who were just as thirsty as they were.

We at 7th Day are in the business of social lubrication - allowing us to slip the restraints of corporate coldness, skirt the rules of society, and slick the road less travelled with a product that’s for everyone.

From charitable ventures, to steadfast support for local businesses, sporting teams, events, and initiatives - our aim is, was, and always will be to propel others toward greatness.

‘Beer, for good’s sake’ is a mission, to drink good and do good.

Sustainability

Here at 7th Day Brewery we try our best to make sustainable choices wherever possible. We are conscious of the environment and want the best for our future generations. This is what we do to help.

Hydroponic Plant Wall

Prior to having this thriving hydroponic plant wall system, we started off with a small pallet plant wall which we built and maintained since opening late 2018. In 2020 we built a self-watering hydroponic plant wall to contribute to offsetting our C02 footprint used in the brew process. Our hydroponic plant wall is a self-maintaining culture of various plants with special grow lights attached to the underside of the timber slats to help them thrive like they have (pictured left).

Some of the benefits of our hydroponic plant wall is that it;

Maximises space - Hydroponic systems require far less space than plants growing in soil and they are positioned vertically on the wall.

Conserves Water - It may seem counterintuitive, but growing plants in water actually use less water than growing the same plants in soil. In fact, hydroponic plants can grow with up to 98 percent less water than traditional growing methods. Conserving water is likely to become more and more crucial as time goes on, making irrigation for agriculture more difficult and less profitable.

Facilitates a micro-climate - In temperature-controlled facilities, plants can be grown year-round, regardless of the climate or weather outside. And with artificial grow lights, even the amount of sun available isn’t a problem.

Produces Higher Quality Food - Unlike soil systems in outdoor climates, veggies that are grown in hydroponic systems ripen naturally, typically gaining more nutrients without artificial nasties quickening the ripening process. This makes for better tasting veggies and herbs, of which we supply to Sale Pepe Pizzeria to put on pizza toppings on the food you eat here!

Carbon Neutral Power

When we first opened up 7th Day Brewery, we shopped around to find the right energy company that would align with our values and sustainable choices. Powershop has been accredited under the government’s Climate Active Carbon Neutral Standard as a carbon neutral business since 2014 meaning that our energy usage throughout the Brewery is 100% carbon neutral. We’re proud to do our part for the environment by using more environmentally friendly energy and offset 100% of our carbon emissions.

Recycled Fit out

When building the Brewery tap-house back in 2018, the team was resourceful with the internal fit out, using the material that was used to make structures from the people that inhabited the venue before, to build new structures. Soon a lot of our furniture and structures were made from other recycled and up-cycled material.

Timber mezzanine stairs that was once built towards the front of our brewery taproom, was recycled to make our beautiful timber bar.

All of our tables are up-cycled timber cable spool and wine barrels.

All of our timber wall cladding is recycled timber from Northshore Timber

Our beer garden fence is made from up-cycled timber palettes

Our men’s urinals are old recycled kegs. (tooheys ;)

We have used retired surfboards for internal and external signage and for our pool table down lights!

Reducing single-use plastic

Local Suppliers

Staying true to our local community and wanting to collaborate with independent companies we aim to support local where we can and make sure our waste goes full circle.

We purchase our grain that we use in the beer making process from a family run business in New Zealand, Gladfield , supporting an independent, small run business.

Once we have made the beer, our spent grain (grain residue and waste) is picked up by a local farmer and is used to feed is 150 head of cattle up in Ingleside, Sydney. We like to know that our waste can be used to fuel other walks of life!

DRINK GOOD, DO GOOD

7th Day Brewery operates with a combined importance of creating excellent beer and a whole hearted involvement within our local community. We rose from the dust by the help of the community through crowd funding, so we promote this idea of giving back and doing good. This idea of local support has shaped the brand, and knowing this makes us who we are.

COLDIES FOR THE RFS - January 2020

During the devastating months of early 2020 when the Australian bushfires tore their way through the country, day in and day out we saw countless efforts of support and help going out to those who were affected. In the midst of such a national crisis the mass of Australian community shared love, empathy, hope, facts and solutions in any way they could.

On Saturday the 11th of January 7th Day Brewery extended an invitation to the wider community to come together over drinks, music and food to collectively raise funds for the Brewery’s local Beacon Hill Rural Fire Service.

With $2 donated from every drink sold, a gold coin red frog guessing jar and countless donation tins around the venue, with the help from everyone involved, 7th Day Brewery raised enough money on the night to buy new equipment to enhance the service they provide to the community and to put on a community bbq for all their families and friends for the efforts and time that went into the months of work on the front line . #drinkgooddogood

With approx.. 600 attendees and a lot more online donaters, as a collective we raised enough to provide 550 filtration systems internationally. One filtration system can provide 100 people with clean water for up to 5 years, and it wouldn’t have happened without the support from the local community ! #drinkgooddogood
